Appert didn’t discover preservation — he discovered leakage.

Appert’s canning was an empirical fix for spoilage: cook food inside a sealed glass jar, and it lasts — unless the seal leaks. He never knew why. He avoided tinplate. He boiled for variable times. He built the world’s first bottling factory in 1804. His 1810 prize recognised a working solution, not a scientific insight.

What it is and the problem it solves

Canning is a method of preserving food by heat-treating it inside sealed glass containers. It solves spoilage during storage and transport.

How it works

Appert filled thick, large-mouthed glass bottles with food, left air space at the top, sealed the cork firmly with a vise, wrapped the bottle in canvas, and boiled it for as long as he deemed necessary to cook the contents thoroughly.

What works

Sealing cooked food in glass jars prevents spoilage — but only if the seal remains intact. Leakage is the sole failure mode Appert observed and controlled.

What does not

It does not explain why it works. Appert did not understand microbial spoilage. Bacteriology had not been developed. Pasteur’s explanation came fifty years later.

What it changes

It changes food logistics: enabling storage and transport of perishables without salt, smoke or drying. It enables year-round supply of meat, eggs, milk and prepared dishes far from production sites.
